This Farro Salad is a great dish you can enjoy as a hearty lunch, or serve as a side at dinner. And, when we get out of this whole pandemic thing... it's a crowd-pleaser for parties and potucks. If you don't have farro, you can substitute with short grain brown rice. The pistachios can be subbed out with walnuts or whatever you have on hand. And white beans would work just as well as chickpeas.
